Healthy Coconut Rice Recipe

While north Indians love their pulaos, south Indians love rice preparations that showcase a single ingredient. Try making this healthy and tasty south Indian style coconut rice recipe the next time you're in the mood for something new. Seasoned with fresh coconut, spices and cashews, it has a nutty flavour you will love!



Preparation time: 15 minutes
Cooking time: 12 minutes
Makes 4 servings



Ingredients
• ½ cup freshly grated coconut
• 2 tbsp sesame seeds (til)
• 1 tsp ghee
• 3 tbsp broken cashewnuts (kaju)
• 2 tsp oil
• 1 tsp urad dal (split black lentils)
• 1 tsp chana dal (split bengal gram)
• 1 tsp mustard seeds (rai/sarson)
• 1 tsp cumin seeds (jeera)
• 1 whole dry kashmiri red chilli, broken into pieces
• 7 to 8 curry leaves (kadi patta)
• ½ tsp asafoetida (hing)
• 2 tsp finely chopped green chillies
• 2 ½ cups cooked rice
• Salt to taste



Method
• Heat a small pan, add the sesame seeds and dry roast them on a medium flame for 3 to 4 minutes, stirring continuously.
• Allow them to cool completely.
• When they cool, blend them in a mixer to a coarse powder and keep aside.
• Heat the ghee in the deep non-stick kadhai, add the cashew nuts and sauté on a medium flame for 2 to 3 minutes. Remove and keep aside.
• Heat the oil in the same non-stick kadhai, add the urad dal and chana dal and sauté on a medium flame for 30 seconds.
• Add the cumin seeds, mustard seeds, red chilli, curry leaves and asafoetida and sauté on a medium flame for 1 minute.
• Add the prepared sesame powder, green chillies, coconut, rice and salt, mix well and cook on a medium flame for 2 to 3 minutes, stirring occasionally.
• Serve hot, garnished with cashew nuts.
